One of my favorite things about summer is that berries go on sale! Normal in my local grocery store they will have raspberries, blueberries, and blackberries on sale during the summer months 10 for $10 which is a great deal! So I like to collect them and freeze them for when berries are a little more expensive! My mom found some berries on sale so she decided to make us these delicious Mini Berry Pies with a little bit of Ice Cream on top! They are so delicious and perfect for summer parties or get togethers!


- 1 cup of sugar
- 4 cups of berries
- 1 small package of raspberry jello
- Store bought Pie crust.
- Cut out with a cookie cutter or design of your choice.
- Put into mason jar tops or you could also use a muffin pan.
- Bake to the directions on the package.
- Cook sugar and water at a low boil until it starts to thicken.
- Add package of Jello and bring back to slow boil.
- Turn down the heat and add blueberries to mixture and cook for 5-10 minutes .
- Take the mixture off the stove and when the mixture begins to cool add raspberries. The reason I did not add raspberries earlier is that they will overcook so quickly.
For the crust use a regular store bought crust. Cut it out with a cookie cutter and then put it in a Mason Jar Top. This is a great way to use those extra Mason Jar Tops that you have laying around! I know I have a ton! You could also use a muffin pan for this.
Then just bake until it is lightly brown on top or to the directions on the package!

Add the berries to the crust. It only takes a little spoon full to fill them up. Which means you will want to eat about 10 of them!
Add a small scoop of ice cream on top to add the perfect touch! This is a delicious dessert and you will not be able to stop eating them! The filling is also good as a topping for ice cream! This is the perfect dessert for summer and all of your friends and family will absolutely love it!
