Healthy Cilantro Lime Cauliflower Rice with a Lower Calorie 7UP Limeade
Swimsuit season is right around the corner and I know a lot of people are starting to be more health conscious to get ready! One of the ways I’m trying to get ready is swapping regular food/drinks in my diet for healthier version. While I was at Walmart a few weeks ago I found some 10 calorie drinks that definitely fit into my new diet! Another favorite food I am swapping out is rice. I’m trying to cut back on some of my carbs so my fiance and I made some cauliflower rice with cilantro and lime. It was an easy recipe that we ate with some delicious steaks and the Ten Calorie 7UP with some added lime to make a limeade! The cauliflower rice is very easy to make and is not exactly like rice but it is very delicious!


- 1 head cauliflower
- 1 tsp olive oil
- 1/2 cup water
- 1 lime juice and zest
- 1 bushel of cilantro
- Cut up cauliflower and then put it in a food processor until it looks similar to a rice consistency.
- Heat a large skillet over medium-high heat and swirl around about a tablespoon of oil to coat the bottom
- Once the oil has heated, add the cauliflower and water
- Cook it for about 5-10 minutes, or until it’s softened.
- Take off heat and add the lime juice, zest, and cilantro.
Cut up cauliflower and then put it in a food processor until it looks similar to a rice consistency.

The Ten Calorie 7UP with added lime was the perfect beverage to complement the cilantro lime cauliflower rice! This was such a fresh and delicious meal and perfect to help me get ready for my swim suit and the beach!

I have never thought of combining cilantro and cauliflower. I think those flavors go well together. Thank you for the idea, and a 7-up limeade sides like the perfect back porch drink while the kids are playing!

First… I’ve heard of making cauliflower into a mashed potato substitute but I’ve never heard of it as a rice substitute. Second… I’ve never heard of using 7-Up in this type of recipe. Brilliant! Thanks for sharing!
