Another favorite food I am swapping out is rice. I’m trying to cut back on some of my carbs so my fiance and I made some cauliflower rice with cilantro and lime. It was an easy recipe that we ate with some delicious steaks and the Ten Calorie 7UP with some added lime to make a limeade! The cauliflower rice is very easy to make and is not exactly like rice but it is very delicious!
- 1 head cauliflower
- 1 tsp olive oil
- 1/2 cup water
- 1 lime juice and zest
- 1 bushel of cilantro
- Cut up cauliflower and then put it in a food processor until it looks similar to a rice consistency.
- Heat a large skillet over medium-high heat and swirl around about a tablespoon of oil to coat the bottom
- Once the oil has heated, add the cauliflower and water
- Cook it for about 5-10 minutes, or until it’s softened.
- Take off heat and add the lime juice, zest, and cilantro.
