These cake mix banana nut muffins are easy and delicious. They use basic ingredients and are moist and yummy. From chopping to eating was only thirty minutes. Not very long for these tasty muffins.
I like to get all my chopping out of the way first so I always start with it first. I wanted my muffins to be banana nut so I went with my favorite cooking nut the pecan. I was raised on pecans and had not tasted a walnut until adulthood.
I like my nuts chopped very finely for baked goods.
We recently ate out and had banana nut muffins with cranberries. Those muffins are the inspiration for this post. So adding cranberries was a no brainer.
Aren’t they beautiful!
Now for the main event. This is such any easy recipe. A box of cake mix, a stick of melted butter, three eggs and three mashed bananas.
It is important that your bananas are very ripe.
If the bananas are very ripe then mashing them is very easy. Mix these with the cake mix and eggs.
Add three eggs to the mixture and blend.
Melt one stick of butter and add to mixture. This is where your creativity begins. I decided to add cranberries and nuts. There are endless possibilities of other add-ins that would be delicious.
Bake at 350 degrees until brown.
