The weather where I live has been dreadful. It is cold (for southeast Texas), wet and drab. We have already had a busy week at work and it is only Monday. I wanted to make some pre-Valentine treats for my co-workers. I make cookies often so I decided to make muffins. I like muffins made with cake mixes. They are quick and easy. This is a basic recipe I have used before but never with a lemon twist.
Recipe for muffins:
18 1/2 -ounce package yellow or lemon cake mix
3 1/2 -ounce package instant lemon pudding mix
4 large eggs
1/2 cup vegetable oil
Combine the cake mix, pudding mix, eggs and oil and blend well with an electric mixer until smooth, about 2 minutes. Fill the muffin tins full with batter. Bake at 350 degrees for 15 minutes. After the muffins have cooked pipe icing over the tops to add more lemony goodness.
1 cup of salted butter
4 cups of powdered sugar
2 tablespoons lemon zest
3 tablespoons lemon juice
2 teaspoons cream
The next step in cupcake fun was to make a cupcake wrapper. I have made it really simple. I have a template here that you can print and cut out of any kind of pretty paper. Just a little glue and you have a professional looking wrapper for your beautiful cupcakes.
