This week for Whip It Up Wednesday I decided to try a recipe that I found on Betty Crocker Online! You can see the recipe here!
Ingredients:
- 2-1/3 cups of baking mix
- 1-1/2 cups milk
- 1/2 cup canned pumpkin
- 1/4 cup vegetable oil
- 2 tablespoons packed brown sugar
- 1 tsp pumpkin pie spice
- 2 eggs
Directions:
- Heat waffle iron; grease with cooking spray, vegetable oil or shortening. In large bowl, beat all waffle ingredients with wire whisk or hand beater until blended. Pour batter onto center of hot waffle iron. Close lid of waffle iron.
- Bake about 5 minutes or until steaming stops and waffle is golden brown. Carefully remove waffle. Serve with syrup.
Waffles are one of my favorite foods in the world! They just make me happy. So while trying to come up with dinner for Monday night I was thinking about what I had at home and what I could make. I decided on waffles, but I just didn’t want plane waffles. I started googling waffles online and found this awesome pumpkin waffle recipe on Betty Crocker! They made a maple apple syrup and topped it with pecans and powdered sugar but I decided I just wanted some plane old pumpkin waffles! I love fall because I have an excuse to make everything with pumpkin!!
I started off by taking all the ingredients and throwing them into a bowl! There really isn’t an order when it comes to this mix. I used baking mix because I had it on hand but I found other recipes where it had these ingredients seperated also.
Then I mixed it well until it was completely smooth.
Then you put it in your waffle iron and bake until its ready. I like mine to be a little crispy so I normally let them go a little bit longer than my waffle iron tells me. I made bacon to make this a real breakfast for dinner kind of meal! Plus, I love bacon as much as I love pumpkin flavored stuff!
And they were then ready to eat! They were extremely delicious and only took about 10 minutes to make!

Hi Cara! Hopping over from Let’s Get Real. I just had to check out your pumpkin waffle recipe. I love everything pumpkin this time of year. We eat breakfast for dinner quite often. It is one of the quickest meals to make which is perfect for our busy schedule.
