This week I will be posting about a recipe I found on Memories by the Mile for Pumpkin Chocolate Chip Cookies!
I love everything that is pumpkin! So I thought what could be better than pumpkin cookies! These are amazing! I made them for a friends birthday and they were everything I dreamed that they would be! Here is the recipe from Memories by the Mile:
Recipe from Janice Guymon
1 Cup shortening
3 Cups Sugar
4½ Cups Flour
2 tsp. Baking Powder
2 tsp. Salt
2 tsp. Baking Soda
2 tsp. Cinnamon
2 Cups Pumpkin(not pie mix)
2-3 Cups Chocolate Chips(optional)
2 tsp. Nutmeg
2 tsp. Vanilla
Mix together all ingredients. Bake at 375 degrees for 13-15 minutes.
I will say that the recipe makes a lot of cookies! I thought oh it will make two dozen that will be fine, but I ended up making 72 cookies total. Also mine definitely didn’t turn out as pretty as hers but they tasted perfect so I will take that as a win!
The first thing I did was cream together the shortening, sugar, and eggs.
Then I mixed together the dry stuff (flour, baking powder, salt, baking soda, cinnamon)
Then I slowly mixed it all together in a big bowl. My little mixer broke a while back and I had to mix this by hand. It was definitely an arm workout. I would say try to use a mixer when you are mixing all the ingredients together because it gets thick!
Then I baked them! They baked quicker than 13-15 minutes in my oven.
Once they were done I let them cool for a while and then they were ready to eat! This is such a great recipe especially since it is Fall! I was thinking I might have to make these for my family at Thanksgiving! So yummy!
